This week I have started a new chapter in my life, I am officially a health coach with Take Shape for Life. I started working with Carrie Baum-Lane last July because I knew that I needed to lose some weight and learn how to eat better. I LOVE to cook and I LOVE food, but I love eating a lot of the wrong foods! Since beginning the program I have learned moderation, nutrition and I’m almost 20 pounds lighter. I definitely feel better! I know if I eat certain foods I will feel a certain way. Sometimes I eat them anyway and sometimes I don’t, but I have knowledge. SO…as a nod to my healthier eating I am sharing one of my favorite recipes. It is low carb, and you can make it low fat by leaving out the sausage and using low fat cheese. Enjoy!
1/2 cup milk (or half & half)
1/2 lb. sausage
1/2 cup cheddar cheese
salt and pepper to taste
Peppers, mushrooms and onions (diced)
Preheat oven to 350 degrees.
Brown sausage and set aside, then saute the veggies until they are soft. Set aside to cool and mix the eggs, cheese and milk. Add the veggies and sausage into the egg mixture and mix well. Salt and pepper to taste. Spoon into a 6 or 12 muffin pan. Bake for 25-30 minutes or until lightly brown and set.
I estimate that these are around 150 calories with sausage and 95 calories without. If I make them in a 6 cup muffin pan I just count that as 2 muffins. This is an estimate based on entering the ingredients into My Fitness Pal and letting it compute the calories.
